Loving The Blogging World…

As of late though I have done less writing I have been reading other people’s blogs like crazy and I am so very impressed with the differing writing styles and vast subject matter that peaks my interest. For me it is all about the title if the title and or subject piques my curiosity then I go for it and click the link. I have enjoyed “getting to know” many others this way. What I really appreciate is the story and the insight that is gained by the story. Maybe I like writing that has a purpose…and perhaps I like that because that is what I do I write with a purpose…to clear my head to speak my mind or to just rant and rave. I love blogging and I love that I am such good company here on Word Press.

As I sit here writing and eating my yummy organic, homemade taco soup (recipe down below thanks Amy M.) I am pondering why I started a blog in the first place. I think back to when I started Embracing Possibilities in April 2010 I had a desire to write about my daughter and I’s lives together not only to keep people updated but so that I wouldn’t forget the path that brought us to where we are today and in 50 years I get to look back and laugh and cry over the journey!! I want my daughter to truly know who I really was and through the struggles how much I loved her. I now write with more purpose and forethought I am trying to more clear, concise and in my mind bring more focus to my content, truly caring about the message I am portraying. I have always had a strong desire to help people as I have mentioned before in my blogs. I also know that my blog cathartic (kind of like a therapy session) and helps me to work things through my crazy brain. (As a side note for me crazy brain is an endearing term I have given myself.) 😛

As I move forward and keep learning I want always remember what a blessing it is to be able to express myself through this medium and I am extremely grateful for all the people who support this endeavor of mine and to all who stumble my way and read about my life and opinions thank you for taking the time to read and feel free to comment with feedback and insight. ❤

Taco Soup

                        Servings: 8 (8oz)                                                 Prep Time: 10 min                                                 Cook Time: 7 hr
Ingredients

1 lb boneless skinless chicken breasts (frozen)
1 can Great Northern Beans (undrained)
1 can black beans, canned (undrained)
1 can Kidney Beans, canned (1/4 drained)
1 can White Corn, Canned (undrained)
1 pkt Taco Seasoning Pkt
1 pkt Ranch Dip Mix Pkt
1 can Diced Tomatoes W/ Green Chilies (undrained)
dash cumin
Directions
Do not drain canned beans, except just 1/4 of kidney beans.
Put all ingredients into slow cooker. Don’t defrost chicken first.
Cook on high for 1 hour and low for 6 hours.
As a side note I cut up the frozen chicken into bite size pieces and I only cooked my 4 hours but it was still very yummy!!!

  2. Like you I like reading people’s honest stories and struggles through their blogs. I’m often helped and inspired by what others write. I am new to writing but I also use it as a medium for bringing clarity. If someone else reads and enjoys it, that’s a bonus. I think writing a journey for your daughter is a wonderful reason to blog. Keep up the good work

    • Thank you so much for the encouragement and being new to the writing process means that you are fresh and full of ideas yay for that. I have always loved writing but due to my ADHD crazy brain it was not always coherent writing. I literally had to retrain my brain how to write in a logical manner. I look forward to reading your blog and learning from you.

  3. I too find writing cathartic, and I appreciate the freedom of writing till my heart’s content here on wordpress. Also, Finding blogs by people with similar experiences and views helps me to feel less alone in my own strange way… Like being part of a community of like-minded people. It’s inspiring.
    Also, your taco soup looks yummy. I might have to make that for my kiddos. =) I look forward to reading more of your blogs. =)

    • Drgnflygrrl, Thank you sooo much for taking the time to leave me a note I greatly appreciate it and I appreciate you taking the time to read my blog. The Taco Soup is so very yummy and so easy throw it all together and let it cook the perfect meal. And even with all organic ingredients it really was not expensive to make. Because there is only 2 in my family I am still eating the leftovers and it is as yummy as it was the first day. I added some avocado to top it off and may I say DELICIOUS!!! Thanks again!
